Three Easy Dump & Bake Casseroles

There are times when you're rushed and don't have time to prepare a meal or want to get take-out. Here are three, easy casseroles to make that don't require a lot of ingredients; but the best thing is, you just dump all of the ingredients into one baking dish, give it a stir and bake it. So simple, so easy, so good.

Alfredo Shrimp Scampi Dump & Bake Casserole

The Southwestern black bean casserole has a nice kick of spice from the salsa and a creaminess from the avocado.

The chicken caprice casserole is very fresh tasting with the cherry tomatoes bursting into your mouth and the basil just adds the right touch.

The alfredo shrimp casserole isn't too heavy on the cream sauce which made it a winner for me.

Ingredients
Southwestern Black Bean Dump & Bake Casserole V/GF/OF
  • 1 3/4 cups low-sodium vegetable broth
  • 1 cup chunky salsa
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 yellow onion, diced
  • 2 cans black beans drained and rinsed; about 2 3/4 cups
  • 1 cup uncooked brown rice
  • 1/2 bunch cilantro leaves, chopped
Chicken Caprice Dump & Bake Casserole
  • 2 cups cooked chicken, diced
  • 1 ¾ cups halved grape tomatoes
  • 3 cups uncooked uncooked penne pasta
  • 3 ½ cups low-sodium chicken broth
  • 2 cups shredded mozzarella cheese, divided
  • ½ cup fresh basil leaves, chopped or torn
  • 2 teaspoons garlic, minced
  • salt and pepper to taste
Alfredo Shrimp Scampi Dump & Bake Casserole
  • 4 tablespoons unsalted butter, cut into 1/2-inch cubes, plus more for the casserole dish
  • 3 cups rotini pasta
  • 1 pound frozen peeled and deveined medium shrimp 
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • Zest of 1/2 lemon
  • 1/2 cup grated Parmesan 
  • 1/3 cup loosely packed fresh parsley, chopped or torn
  • 1/2 cup heavy cream
  • salt and pepper to taste
Instructions

Preheat the oven to 400 F.
Mix the vegetable broth and salsa in a medium pot and bring to a boil over high heat. 
Chop peppers and onions.
While the liquid is heating up, spread peppers and onion evenly across a 9×13″ pan or casserole dish.
Sprinkle the black beans over the veggies, then add the uncooked rice on top.
Remove the vegetable broth from the heat once it comes to a boil and pour evenly over the casserole dish.
Cover the casserole with aluminum foil
Bake 60 minutes
Chicken Caprice Dump & Bake Casserole
Preheat oven to 425 F
Mince garlic
Spray a 9 x 13-inch baking dish with cooking spray.
In the prepared dish, stir together cooked chicken, tomatoes, uncooked pasta, chicken broth, 1 ½ cups of mozzarella cheese, about half of the basil leaves, minced garlic, and salt.
Cover the dish tightly with foil and bake for 40 minutes.
Remove from oven.
Sprinkle remaining ½ cup of mozzarella over the top. Bake until cheese is melted.
Garnish with remaining basil and tomatoes
Alfredo Shrimp Scampi Dump & Bake Casserole
Preheat the oven to 425 degrees F.
Chop garlic
Generously grease the bottom and sides of a 9-by-13-inch casserole dish with butter.
Spread the rotini in an even layer in the bottom of the prepared dish.
Scatter the shrimp over top and dot with the cubes of butter.
Pour in the broth, then sprinkle with garlic, lemon zest, salt and some black pepper.
Cover with aluminum foil and bake until the pasta is al dente, about 25 minutes.
Heat cream until warm
In a small bowl, toss together the Parmesan and parsley.
When the pasta is done, stir in the warm cream and top with the cheese mixture.
Tips
  • In the Chicken Caprice, you can substitute with a can of undrained diced tomatoes if you don't have grape tomatoes
