Easy Baked French Toast Casserole

There’s nothing like a home cooked meal on Christmas morning. But who wants to spend time in the kitchen while everyone else is enjoying themselves around the Christmas tree?


Enjoy a delicious homemade french toast casserole with berries and cream cheese on Christmas morning with this easy make ahead recipe.


This recipe is delicious all year round, but to my family it’s known as Christmas breakfast! Best of all you can revise the recipe with any berries to ensure your family will love it!

To get started with the casserole you’ll need:

-a loaf of bread

-cream cheese

-fresh or frozen berries

-eggs

-milk


For the syrup:

-sugar or monk fruit sweetener

-water

-butter

-cornstarch

-berries

To begin preparing the casserole, cut the bread into 1″ cubes. Place half of the bread in the bottom of a greased 9×13 pan.


Cut the cream cheese into 1″ cubes and layer on top of the bread.

Add berries and top with remaining bread cubes.

Whisk the eggs, milk and honey until well combined and evenly pour over the casserole. Allow to chill in the fridge overnight at least 8 hours. This will allow the bread to soak up the milk mixture which creates the perfect french toast texture.


This step can be prepared a few days in advance.

30 minutes prior to baking, remove the casserole from the fridge.

Cover and bake for 30 minutes. Uncover and bake for an additional 30 minutes or until the middle is set and the casserole is golden brown.

While french toast casserole is baking, prepare the syrup.


In a saucepan, combine sugar, cornstarch and cold water. Bring to a boil for 3 minutes, then add in berries.


Reduce heat and allow to simmer for 8-10 minutes. Stir in butter until melted.

Drizzle homemade syrup over each piece of french toast casserole. Dig in and enjoy!

Ingredients

  • 12 slices day old bread of your choice
  • 8 oz. cream cheese
  • 1 C. mixed berries; fresh or frozen
  • 12 eggs
  • 2 C. milk
  • 1/3 C. honey
For the Syrup
  • 1/4 C. sugar or monk fruit sweetener
  • 1 C. water
  • 1 T. butter
  • 2 T. corn starch
  • 1 C. mixed berries
Instructions
For the casserole
Cut bread into 1" cubes. Place 1/2 in a greased baking dish. Cut cream cheese into 1" cubes. Place over bread. Top with berries and remaining bread.
In a large bowl beat eggs, milk and honey. Mix well. Pour over bread. Cover and chill 8 hours or overnight.
Remove from fridge 30 minutes before baking.
Cover and bake at 350℉ for 30 minutes. Uncover and bake 30 minutes longer or until golden brown and center is set.
For the syrup
While the casserole is baking, make the syrup. In a saucepan combine sugar, cornstarch and cold water. Bring to a boil.
Boil for 3 minutes.
Add berries, reduce heat and simmer 8-10 minutes.
Stir in butter until melted.
