I don't know about you but my kids are food snobs and sometimes I feel like ripping my hair out trying to find something they all agree to eat.


Now combine those picky eaters with a lazy cook such as myself you can imagine how motivated I am to actually make anything at all.


So I'm happy to say that I think I found another winner: Bacon-Wrapped Scallops!


This delectable treat perfectly combines the smoky richness of bacon with the delicate, oceanic flavors of scallops.


It's a straightforward recipe: wrap each scallop in bacon, secure it with a wooden pick, and broil to crispy, golden perfection.


Perfect as a snack, party appetizers or have it for dinner like I do!

Ingredients

  • 12 strips best-quality bacon
  • 24 sea scallops each about an 1-inch diameter
Instructions

Pat scallops with paper towel to remove extra moister.
Wrap each scallop one with a half-bacon slice, secure with a wood toothpick or skewer.
Arrange bacon-wrapped scallops on a rack in a broiling pan.
Place the rack in top position in oven and set the broiler to high.
Broil the bacon scallops, turning once halfway through cooking, until scallops are opaque throughout and bacon is browned evenly on all sides, this can take around 8 to 12 minutes.
Remove from the pan, arrange on a tray or platter and serve.
Tips
  • I like to serve them with smoky BBQ sauce but really any sauce can do.
