If you are a fan of quiche, you are definitely going to enjoy this variation. These Mini Frittata Tartlets are essentially bite sized quiches, making them the perfect finger food to serve at your next brunch.

The mini tartlets are also great to make ahead and have on hand for a quick grab-and-go breakfast.

A few months back, I shared a recipe for my mini egg bites. These are very similar, however the addition of the pastry shells add a little more substance to the tarts, as well as enhance the overall look of them.

The addition of salsa adds such a great flavor to the tarts and keeps them from drying up and becoming rubbery in the oven.

These little tarts look so cute stacked up on a tiered tray, and will make hosting your brunch a breeze!

Begin by removing the mini tart shells from the package and allowing them to thaw at room temperature for 20 minutes.

While the tart shells are thawing, preheat the oven to 375, and begin preparing the egg filling.

Mix together eggs, salsa, cheese, green onions, and salt and pepper.

Place the thawed tart shells on a baking sheet lined with parchment paper. Fill the tarts up with the egg mixture and bake in the oven for 15-20 minutes or until the eggs have fully cooked.

Remove from the oven and let cool slightly before serving.

These taste the best warm or at room temperature in my opinion. This makes them perfect for hosting as you will not need to worry about yours eggs getting cold.

Garnish with a little extra chopped green onions before serving.

Ingredients

  • 1 package mini tart shells (18)
  • 6 eggs
  • 1/4 cup salsa
  • 1/3 cup shredded cheese
  • 3 tbsp finely chopped green onion
  • Salt and pepper to taste
Instructions

Thaw tart shells according to package directions.
Preheat oven to 375.
In a large bowl mix together 6 eggs, 1/4 cup salsa, 1/3 cup shredded cheese, 3 tbsp finely chopped green onion, and Salt and pepper to taste.
Fill the tarts with the egg mixture and bake in the oven for 15-20 minutes.
Let cool slightly or to room temperature before serving.
