Dragon Fruit Smoothie and How to Prepare It "Jersey Girl Knows Best

Have you ever heard of dragon fruit? It is an exotic fruit that is grown on trees with leaves that look like a cactus. Yes...cactus!!! Google it! They are grown in Central America and Northern South America. Let’s make a smoothie with it! Ready?! Let’s do this!
Look how beautiful the color is on this fruit. It is so exotic!
We start by cutting the fruit in half lengthwise. Look at that mystical white and speckled flesh. If I had never saw this fruit before, I would never guess that it looked this way when you open it up :). Did you know that some types of dragon fruit have a pink color inside? I have not seen one yet, but I wonder if it tastes different...
Now the easiest way to get the flesh of the fruit out is to use a large spoon to scoop around the edges of the dragon fruit to get it out of its skin. It is just like scooping out an avocado.
After you scooped each half you can begin cutting the half egg shape into slices. I sliced these about a 1/4 inch thick as shown.
Add your dragon fruit, coconut milk, avocado, oatmeal and fill with water/ice. Blend.
If it's not not sweet enough, you can add in honey or maple syrup. Enjoy!
The dragon fruit and a very light sweet taste and the texture is like a kiwi. There are lots of seeds which gives it a crunchy texture.

Ingredients
- 1/4 cup Dragon Fruit
- 1/2 cup coconut milk
- 1/4 ripe avocado
- 1/2 cup quick oats ( blend dry for a smoother texture)
- water & ice
- 1 tsp. Honey or pure maple syrup
Instructions
- To prep the Dragon fruit: We start by cutting the fruit in half lengthwise.
- Using a large spoon scoop out the flesh by using the spoon in between the skin and flesh and all the way around until it comes out in one piece, just like an avocado.
- After you scooped each half you can begin cutting the half egg shape into slices. I sliced these about a 1/4 inch thick as shown.
- To prepare the smoothie: Take 1/4 cup Dragon Fruit, 1/2 cup coconut milk, 1/4 ripe avocado, 1/2 cup quick oats (blend dry for a smoother texture), fill remaining with water & ice. I like adding honey or maple syrup for extra sweetness. Blend all ingredients in a single use blender or large blender until smooth then enjoy!
