Technically speaking you can make this recipe with nothing more than a mixing bowl and a whisk. However, if you want to elevate the dressing to the next level you should definitely use a high speed blender.
- Why Use a blender? Well, the chilis are whole. So if you don’t have a blender you have to cut them by hand. Even after you cut the chilis you’re still going to have large chunks of chili in your dressing. Blending the dressing will create a smooth and creamy dressing without any spicy chili chunks!
- Citrus juicer: A citrus juicer will make it a lot easier for you to get every drop of juice out of those precious limes.
There are many ways to enjoy this delicious dressing! Here are a few of my favorite ways to use it:
- Over a southwest style salad
- To dressing a fruit salad
- Marinate salmon or shrimp
- Marinate BBQ chicken
Juicing a lime is pretty easy. Here’s how:
Without a citrus juicer
- Cut the lime in half crosswise.
- Hold one of the halves over a small bowl or measuring cup with the cut side facing down.
- Squeeze the lime with your hand, applying firm pressure and twisting it back and forth as you go.
- Repeat with the other half of the lime.
With a citrus juicer
- Cut the lime in half crosswise.
- Place one of the halves inside the citrus juicer. Use the lever to squeeze the juicer closed over a small bowl or measuring cup to catch the juice.
- Repeat with the other half of the lime.
The amount of juice in one lime can vary depending on its size and juiciness. However, on average, one lime yields about two tablespoons of juice.
Some limes have more juice than others, this depends on the size of the lime. How much the lime tree was watered. Is ripe it is and if it is in season or not. Large limes harvested while in season from well watered trees will have more juice.
If you need more juice, you can always use a citrus juicer or roll the lime on a hard surface before cutting and squeezing.
