EASY GREEN GODDESS DRESSING


This time of year, Spring and Summer we enjoy eating lots of hearty salads. I’m typically not one to saturate my salads with dressing but this dressing is different. It tastes so fresh, very robust and it’s creamy so you don’t need to add too much to taste it in your salad.


If you like Trader Joe’s green goddess dressing, try making your own, you will love it even more. This recipe has no mayo or oil and the flavors are so delicious. You can change it up by incorporating your favorite herbs and seasonings. If you want a little heat, add some serrano or jalapeño chili pepper. This is great on salads, as a dip or even in a yummy pasta recipe. I use it on fish and it adds such a wonderful flavor.


This is a great meal prep food too, I even made travel size portions for my daughter. It’s such a flavorful dressing and heart healthy too. The best part is you get to control the quality of your ingredients. You can also make it as thick or thin as you like by adjusting the liquids. If you want to make this vegan, use unsweetened coconut yogurt.

Ingredients
For the dressing
  • 1/2 cup 0% Greek yogurt, (I use Fage)
  • 1/2 juice of a lemon
  • 1/4 cup water 
  • 1 tbsp Braggs apple cider vinegar
  • 1/2 cup spinach 
  • 1/2 cup parsley 
  • 1/2 bunch of chives
  • 1 garlic clove 
  • 2 springs of Thyme (leaves only)
  • Salt & pepper to taste
Instructions
For the dressing
Using a high powered blender, (I use a Vitamix) add the yogurt and all the liquids. 
Add the herbs, garlic, salt, pepper and blend on high until you achieve the consistency you like.
Store in a glass container with a lid for up to 5 days.
