Hello Foodie Friends,


Summer is in full swing and lemons are the perfect fruit to add to your dressings and sauces, marinades and refreshing drinks. This time I will be using ripe sweet lemons to make "lemon pesto". This is a simple twist on the traditional recipe, just add lemon zest to the blender to brighten this pesto.


Here are the ingredients:

  • basil
  • almonds
  • parmesan cheese
  • garlic
  • lemon zest
  • extra virgin olive oil
  • red crushed pepper
  • salt


Simply blend all the ingredients together for 1 -2 minutes, then add the extra virgin olive oil slowly until reaching desired consistency. I like mine a little chunkier for added texture and crunch.

Ingredients

  • 2 handfuls of organic basil (rinsed and pad dried)
  • 1 garlic clove
  • 1 lemon (1/2 in lemon zest and 1/2 of the yellow peel)
  • 1/2 cup of Extra virgin olive oil
  • 1/3 cup of grated parmesan cheese
  • 1/4 cup of slivered almonds or pine nuts
  • 1/4 tsp of red crushed pepper
  • salt to taste
Instructions

In a food processor add the basil, nuts, garlic, parmesan cheese and chopped fro about 1-2 minutes. Then add salt, red crushed pepper and add the extra virgin olive oil slowly until desired consistency.
Use in pasta salads, over grilled chicken or meats and much more.
