I think we all fell more in love with Feta during this year’s Feta and Tomato Pasta Bake Tik Tok craze…in fact, I heard there was a Feta Shortage for a while!

So that’s what got me thinking about making a dip with Feta. One thing led to another, and I created this Roasted Red Pepper Feta Dip that I am absolutely over the moon about!

This dip comes together so quickly and easily, and makes a great appetizer for your next party. That depth of flavor that’s provided with Roasting of the Red Bell Pepper, the tang and creaminess from the Feta Cheese, and then don’t forget those all-important seasonings! It’s such a unique dish, it’s sure to be a hit!

This is also versatile enough to be used as a sauce, which, in fact, I highly recommend you watch out for- I’ve got a delicious dinner coming your way using this that you won’t want to miss!

Roasted Red Pepper Feta Dip

Ingredients

  • 1 Medium Red Bell Pepper
  • 8oz Block Feta Cheese
  • 3 Tbsp Lemon Juice
  • 1 Tbsp Minced Garlic
  • 1/2 tsp Paprika
  • 1 tsp Onion Powder
  • Salt & Pepper to taste
Instructions

Preheat your oven to 450º. Then take your Red Pepper and cut out the seeds and slice in half. Place on a baking sheet lined with foil and bake for 15 minutes. After 15 minutes, add the 8oz Block of Feta Cheese and bake both the Peppers and the Feta together for 5 more minutes. The pepper should have black and brown spots and be blistering.
Once they're done, let the Pepper cool off for about 5 minutes, then carefully peel off the outer layer of skin that's bubbled up during baking.
Add the Pepper, Feta Cheese, and the rest of the ingredients- 3 Tbsp Minced Garlic, 1 Tbsp Minced Garlic, 1/2 tsp Paprika, 1 tsp Onion Powder, and Salt & Pepper to taste, to a blender or food processor. Blend for several minutes, until little to no chunks remain. Serve with bread, pita chips, crackers, pretzels, etc. Enjoy!
