Red Pesto Creamy Egg Dip

If you’ve read some of my introductory posts from time to time, you may have already noticed that I’m the kind of person who always goes through some kind of phase and always has an ingredient / food that I am completely obsessed about and I experiment with different versions of it. Well, these days, this dish was egg cream/dip. And from this I have now made a version of dried tomato-red pesto, which can be an absolute favorite in the summer. You don't need a lot of ingredients, you can also use store-bought red pesto, of course the most delicious if you make it with your own homemade dried tomato cream.

  • 4 eggs, cooked
  • 2 Tbsp. butter
  • 1 tsp. ketchup
  • 1 tsp. mustard
  • 6-7 pieces of sun-dried tomatoes
  • 1 smaller red onion, chopped
  • salt and pepper
  • 6 slices of bread

Mix all your ingredient in a blender. Serve with some fresh or toasted bread.
