Pea Guacamole

People I know seem to feel strongly about eating peas. They either love them or hate them.
I, personally, love peas. Always have. As a kid, I used to eat them straight from our little garden like candy. They are sweet and juicy and just plain yummy.
I am married to someone who hates peas. I don’t know what peas ever did to him, but just the mention of peas sends him running in the opposite direction.
But peas are more than just yummy little snacks; they are also full of good vitamins and protein. So when I came up with this recipe, I just didn’t tell my husband that included peas. He ate it and loved it!
The avocados have a fairly string flavor, so the main taste is not peas. They add sweetness and a subtle flavor, but don’t really stand out.
This is a great snack, appetizer or even sandwich spread now that the weather has gotten warmer.
Serve with tortilla chips for a great snack!
Keep it healthy with lots of fresh veggies to dip into the guacamole!

Pea Guacamole

Ingredients
- 2 medium avocados
- 3/4 cup peas (defrosted frozen work great)
- 4 large basil leaves
- 2 teaspoons lemon juice
- 1 green onion, white and light green parts
- pinch of salt
Instructions
- Combine all ingredients in a blender or processor and process till smooth and creamy.
