Tropical Energy Bites
These coconut mango energy boosting bites are so yummy and healthy. Super easy and quick to make. Seriously this recipe requires 3 steps and 5 ingredients! Try them out for a perfect for an on the go snack.
These are called 'energy' bites thanks to the natural sugars contained in the dried dates and mangos. Dates are great for maintaining energy, but can be boring on their own. They're used in the majority of protein/energy ball recipes and help to create the perfect texture. Dried fruit and flax seeds are also a great source of fiber and other nutrients!
You can add dried pineapple for this recipe or substitute other fruits/flavors. I used ground flax seed as a binder, but chopped nuts are a wonderful alternative.

Ingredients
- 1 cup of dried mangos
- 10 pitted dates
- 1 cup of ground flax seed
- 2 tbsp hemp seeds
- shredded coconut to coat
- Hot water to soak dried fruit
Instructions
- Soak the dried mangos and10 pitted dates in hot water until softened (approximately 5 min)
- Remove the fruit and place on paper towel, reserving the water
- Thoroughly dry the fruit, then combine the dates and mangoes in a food processor or blender with the ground flax seed and 2 tbsp hemp seeds
- Add some reserved water if needed
- Scoop out spoonful's of the mixture and roll into balls
- Coat the bites with shredded coconut
