Matcha Banana Energy Bites

These Matcha Banana Energy Bites are full of healthy carbs and fats to sustain you along with nutritious ingredients to power and fuel your day. These no-bake energy balls would make a great “on-the-go” or quick snack that provide a little caffeine boost from the matcha and allergy friendly chocolate. Also included are bananas, dates, almond butter and ground flax seeds assist with beneficial fiber and protein.


Easy to make and can be taken on hikes, bike rides and car trips for a convenient snack option. This vegan/dairy free recipe makes approximately 22 energy balls that are a little larger than a tablespoon size or about 1 1/2-inch diameter each. You can omit the chocolate for a little less calories, fat and sugar.

Ingredients:


  • 1 cup (8oz) dehydrated banana chips
  • 2 tbsp YUM Matcha powder (ceremonial grade organic)
  • 1/4 cup almond butter
  • 1/4 cup Milled Flax Seeds
  • 2 tbsp Aloha vanilla plant protein powder
  • 5 large dates (pitted)
  • 1/2 tsp coconut oil
  • 1 cup (8oz) allergy friendly semi-sweet chocolate chips

Instructions:


First, add banana chips to a food processor or blender and pulse a few times, then process until small crumbs.

Next, add all other ingredients, except coconut oil and chocolate. Process for about one minute or until well blended and small crumbly texture.


Tip: You may need to scrape down sides halfway through.

Scoop mixture out by the tablespoon full and roll into balls. Lay them on waxed paper that is placed on a baking sheet. Chill in refrigerator for at least 10 minutes.

In a small bowl, add chocolate and coconut oil and melt according to package directions.


How do I melt chocolate? I microwaved for 50 seconds on high, then stirred vigorously with a fork and heated for another 15 seconds and repeated until smooth when stirred.

Remove matcha balls from fridge and dip each one in melted chocolate, then place on a waxed lined cooking rack or cookie sheet.

Optional: If desired, use some extra matcha powder to sprinkle a little on each matcha bite.

How to store homemade matcha banana energy bites:


Safely store in fridge for up to one week or freeze for up to 3 months. If planning to take on a trip, hike or bike ride it’s best to keep cool or it should be fine to take in temperatures under 65 degrees (mainly due to the chocolate/coconut oil coating melting point.)

How much caffeine does matcha have vs coffee and green tea?

These matcha energy balls have a delicious taste with a little crunch inside from the banana chips. They are very satisfying and just a couple of these will sustain you and give you a clean energy boost for your morning or afternoon snack and great for before workouts.


Note: I would not recommend consuming these any more than 5 hours before bedtime for a good night's rest.
