Mango Chia Seed Pudding

This flavorful chia seed pudding makes a fresh, tropical breakfast or dessert to enjoy. It is incredibly easy to fix up and feels super refreshing, making it the perfect snack to enjoy during the warmer months. This recipe only calls for 6 recipes and has a prep time of less than 10 minutes. You can honestly top this pudding with anything you desire. I used greek yogurt and fresh mango chunks but you can use anything- from whipped cream, to other fresh fruit, to toasted coconut (the list is endless!). Plus, this pudding is absolutely stunning- the vibrant layers just made breakfast 10x more enjoyable. Happy making!

Ingredients

  • 1 cup whole milk
  • 1/4 cup chia seeds
  • 1.5 tbsp honey
  • 1/2 tsp vanilla extract
  • 1 cup fresh frozen mango chunks
  • 1/4 cup greek yogurt
Instructions

In a medium mixing bowl, add the milk and chia seeds and mix until well incorporated. Add the honey and vanilla extract and mix again until combined. Allow the mixture to sit for 10 minutes and stir again to ensure that there are no clumps remaining.
Place the chia seed pudding in the fridge for an hour up to overnight.
When ready to assemble, puree the mango using a blender. Reserve some mango cubes to top.
Prepare 4 serving cups or containers and divide the mango puree between them. Then divide the chia seed pudding among the serving cups, pouring it on top of the mango puree. Top by placing a dollop of greek yogurt in each cup and pieces of mango.
