Cherry Almond Butter Chia Pudding

I have been making chia pudding for over nine years now but I don’t think I’ve ever shared my recipe and it’s probably because it is so simple and really just requires two main ingredients -- chia seeds and almond milk! However, I have tried many different recipes and they are not all the same. I like my chia pudding to be really thick in consistency and therefore I tend to stick to the ratios below. I hope you like them too!
For this recipe, if I was having it for breakfast I would have the entire serving, however, you can also split it in half to have as in between meals/ on the go snacks! This chia pudding also pairs beautifully with greek yogurt and fruit! For this recipe I paired it with fresh cherries since they are in season and the juicy and tartness pairs well with the creamy chia pudding. Almond butter offers a great healthy fat in the recipe and I find it really tastes well with cherries but feel free to swap in peanut/cashew/sunflower butter based on your own preference!

You'll need three tablespoons of chia seeds for this recipe!
Give it a good mix if you notice your chia seeds are clumping together before you place your jar in the fridge!

Cherry Almond Butter Chia Pudding

Ingredients
- 3 tablespoons chia seeds
- 1 cup almond milk/milk of choice
- ½ teaspoon vanilla extract
- ⅓ cup pitted cherries
- 1 tablespoon almond butter
Instructions
- Add your chia seeds, almond milk and vanilla to a mason jar/secure tupperware. Give it a really good shake.
- Let your chia seed mix sit on the counter for 3-5 minutes.
- Afterwards give it another good shake. If you notice your chia seeds are clumped together, open up your jar and give it a good mix with your spoon.
- Place your jar in the fridge for at least two hours or overnight to let the chia seeds fully expand.
- Then it is ready to be enjoyed and topped with your cherries and almond butter!
- Can be stored for four days in your fridge!
Tips
- Feel free to get creative with your toppings! Mixed berries and coconut is a great combination as well or give peanut butter and jelly a try!
