When you are craving a delicious ice cream cookie sandwich, I’ve got the perfect recipe for you. This ice cream cookie sandwich is easy to make and absolutely delicious. All you need is some vanilla ice cream, cake mix chocolate chip cookies, and a few simple ingredients.

The best part of this recipe is that you can customize it however you want. Add your favorite flavors of ice cream, like mint chocolate chip ice cream , and cookies to create the perfect treat for yourself or your friends.

Freeze the cookies. When you are making this ice cream cookie recipe you want to freeze the cookies before you add the ice cream. I like to make the cookies the day before and about 30 minutes before it is time to make the cookies, I like to freeze the cookies. It makes it easier to work with.

Good Quality Ice Cream. While I love making homemade low calorie ice cream, for this recipe, you want a good ice cream. Homemade no churn ice doesn’t work that well because it tends to melt faster.

  • Half Gallon Vanilla Ice Cream
  • 16 Cake Mix Cookie– While making the cookies, add in whatever you want. I am using M&Ms.
  • Topping– I like to use things like Mini chocolate chips, Coconut flakes, Sliced almonds, Walnut pieces, Sprinkles

How to Make Ice Cream Cookie Sandwiches

Make the cake mix cookies according to the directions, add in whatever add ins you want before baking.

30 minutes before assembling the cookie, freeze the cookies.

Add the toppings in a separate bowl or plates for each one.

Place a cookie upside down, with the top on the table and add a scoop of ice cream on it.

Place another cookie on top, right side up, pressing it down lightly.

Clean the ice cream that has come out from sides of the cookies.

Roll the sandwich into the toppings that you choose. If the toppings do not stick well, press it in with your hand.

Place the finished sandwich on a cookie sheet, pan or plate covered with a piece of parchment paper.

Put in the freezer for 10-20 minutes to harden.

Store in a freezer bag.

When you are ready to have one, place it on a plate at room temperature for a few minutes before eating, as the cookies will be hard.
