Why you need soft cookies for an ice cream sandwich
You want to make sure the cookies you use for the ice cream sandwich is soft because otherwise the cookies can be too hard to eat. A crispy cookie that is frozen is going to feel like a teeth breaker. A soft cookie, even when it is frozen, is still easy to bite into.
What is the cookie of an ice cream sandwich made of?
I always use my cake mix cookies. I take the basic recipe and add either chocolate chips or M&Ms. You can also use other cookie flavors. I love the cake mix peanut butter cookies as well. The most important thing about this ice cream cookie sandwich is that you are using a soft and chewy cookie.
How to store ice cream sandwiches
You can store your ice cream cookie sandwiches in the freezer for up to 2 weeks. First, I freeze my Chipwich on a baking sheet or a plate. This lets the ice cream cookie sandwich freeze into place so it does not stick to the plastic. Then, I like to wrap each ice cream cookie sandwich with plastic wrap and put in a plastic baggie so that they don’t get freezer burned. When you are ready to eat one, let it sit out on the counter for about 5 minutes so that it is soft enough to bite into.
Do I have to Make Homemade Cookies
I prefer to make homemade cookies. Especially cake mix cookies because they are fast and simple. However, you do not have to use homemade cookies. You can use store bought cookies if you are in a hurry or don’t want to use the oven.
Tips for Making Ice Cream Cookie Sandwiches
Making the cookies a bit special. Because there is so much sweet with these ice cream cookie sandwiches, I like to add a little bit of salt to the tops of the cookies.
Freeze the cookies. When you are making this ice cream cookie recipe you want to freeze the cookies before you add the ice cream. I like to make the cookies the day before and about 30 minutes before it is time to make the cookies, I like to freeze the cookies. It makes it easier to work with.
Good Quality Ice Cream. While I love making homemade low calorie ice cream, for this recipe, you want a good ice cream. Homemade no churn ice doesn’t work that well because it tends to melt faster.
Rolling the cookies. When you roll the ice cream cookie sandwiches, the cookies look so pretty. Not only that, it gives the cookies another level of yumminess. You can use a wide variety of things to roll the cookies in. You can use sprinkles or mini chocolate chip cookies. I even like to use very thin almond slices. Dip the filled cookies in the mixture and coat the ice cream well.
Can I skip the sprinkles? You don’t need to roll the ice cream cookie sandwiches in the sprinkles or anything else. If won’t affect the sandwiches in anyway.
Do I need anything special to make the cookie ice cream sandwiches? You don’t need anything special for the ice cream sandwiches. I like to use an ice cream scoop to add the ice cream to the cookies, but in a pinch, you can use a rubber spatula, wooden spoon or tablespoons.
