Ice Cream Cookie Sandwiches

With fall officially among us, I wanted to reminisce on the warmer months with one of my favorite treats: ice cream cookie sandwiches. Nothing reminds me of summer more than ice cream. Combined with a classic chocolate cookie (I used the KitchenAid Chocolate Chip Cookie Recipe) these sandwiches are sure to be a hit! I use a double cookie scoop to make these–we’re all about big cookies here. When they're completely cooled, it's time to assemble. I used Talenti non-dairy dark chocolate, but go for a classic vanilla if you please. Press that second cookie on top and squeeze slightly until the ice cream meets the edges without oozing out. Roll in some chocolate chips you've desired and serve immediately. Enjoy these awesome treats!

Ingredients
KitchenAid Chocolate Chip Cookies
- Two sticks (1 cup) softened unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1.5 tsp. vanilla extract
- 3 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 12 oz. semisweet chocolate chips
- One pint ice cream of choice
- Extra chocolate chips for garnish (optional)
Instructions
Cookies
- Preheat oven to 375 degrees.
- Place sugars, butter, eggs, and vanilla in mixer bowl. Attach bowl and flat beater to mixer.
- Turn to Speed 2 and mix for 30 seconds. Stop and scrape bowl. Turn to Speed 4 and beat another 30 seconds. Stop and scrape bowl.
- Sift together baking soda, salt, and flour.
- Turn to Stir Speed. Gradually add the flour mixture to the sugar mixture over about 2 minutes.
- Turn to Speed 2 and mix 30 seconds.
- Turn to Stir Speed and add chocolate chips, mixing for 15 seconds.
- Drop by rounded tablespoons onto greased baking sheets, about 2 inches apart. Bake for 8 to 10 minutes.
- Let the cookies rest for 1 minute after removing from oven, then remove them and cool on wire racks.
Cookie Sandwich Assembly
- When cookies are completely cooled, place one scoop of softened ice cream on 12 cookies.
- Sandwich together two cookies. Repeat until 12 cookie sandwiches are complete.
- Roll in chocolate chips for garnish if desired and serve immediately.
Tips
- These cookies will stay in the freezer for several days. Allow to soften for several minutes before serving.
