Shahi Tukda
The word shahi means “royal” and tukda or tukra means "a piece”; This sweet is also known as "Double Ka Meetha". Shahi tukda is a rich royal dessert made with ghee-fried bread slices soaked in cardamom sugar syrup, topped with creamy rabdi and garnished with nuts.
Double ka meetha is quite famous dessert of Hyderabad and most often this scrumptious dessert are served at weddings and parties.
It's flavoured with cardamom powder and garnished with some fine chopped pistachio and almonds.
It can be easily made at home during any occasion. This dessert taste delectable & will definitely wins your heart. Just soak the shallow fried bread pieces in the sugar syrup immediately for 2 to 3 minutes, while turning them once after 1. 5 minutes so, they get evenly soaked. Drain and remove them in a serving dish. Pour the warm rabdi evenly over the sugar syrup coated bread pieces.
Garnish with pistachios and some almonds silvered. Serve shahi tukda immediately or refrigerate till it is chilled and then serve.

Ingredients
For Rabdi (Rabri)
- 1 1/2 cups full-fat milk
- 1/4 cup condensed milk
- 1/4 tsp cardamom (elaichi) powder
For Shallow Frying Bread
- 3 tbsp ghee
- 4 round piece whole wheat bread
For Sugar Syrup
- 1/4 cup water
- 1/2 cup sugar
- a few saffron (kesar) strands
For Garnish
- 1 tbsp pistachio slivers
- 1 tbsp almond slivers
Instructions
For Rabdi
- Bring the milk to boil in a deep bottom pan, stir it in between inorder to avoid burnt milk.
- Once milk reduced to half then add condensed milk.
- Mix well and cook on a medium flame for approximately 10 minutes, while stirring continuously and scrapping the sides of the pan.
- Add cardamom powder and mix well.
- Keep aside to cool completely.
For shallow frying bread
- Cut the whole wheat bread using round shape cutter from the centre.
- Heat the ghee in a pan and shallow fry bread till golden brown in colour from both the sides.
- Remove them in a plate and keep aside.
For Sugar Syrup
- Combine the sugar and water in a broad deep pan & cook on a high flame till the sugar syrup is of 1 thread consistency.
- Add few saffron strands, cardamom powder and mix well. Keep aside.
Assembly of Shahi Tukda
- Soak the fried bread pieces in the sugar syrup immediately for 1 to 2 minutes, while turning them so, they get evenly soaked.
- Then serve the crispy bread & pour the warm rabdi evenly.
- Garnish with pistachios and some almonds silvered.
- Serve shahi tukda immediately or refrigerate till it is chilled and then serve.
Tips
- Bring the milk to boil in a deep bottom pan, stir it in between inorder to avoid burnt milk.
- use full cream fat milk for making Rabdi.
- You can use any bread of your choice.
- Instead of shallow fry of bread, you can deep fry as well to get that extra royal dessert taste.
