Want something exciting and delicious to have for lunch this weekend? Then try this!

Halloumi shawarma pitta

With fresh crunchy salad and a creamy yogurt tahini dressing!

Simply marinade your halloumi strips in some shawarma paste & lemon juice, and grill in the oven, until crispy and brown. Serve on crispy pitta, for the perfect mix of textures.

For the dressing, i mixed together some smooth tahini, natural yogurt, lemon juice, minced garlic and some salt, to create a lovely smooth wetness for the meal.

Served with some fresh tomatoes, spinach leafs, crunchy cucumber, finely sliced red onion, this meal is the perfect healthy lunch.

Ingredients

  • 1 pack of halloumi
  • 2 tsp shawarma paste
  • 2 flat bread pittas
  • 1/3 cucumber
  • 1 tomato
  • Some mixed lettuce leaves
  • 1/2 red onion
  • 1 heaped tsp smooth tahini
  • 2 tbsp natural yogurt
  • 1 lemon
  • 1 clove of garlic minced
  • 1/3 tsp salt
Instructions

Cut your halloumi into equal strips. In a bowl add your shawarma paste and 1/2 your lemon squeezed and gentle toss the halloumi through the mix. Turn your oven onto grill mode to heat up.
Meanwhile mix your yogurt, tahini, 1/2 lemon juiced, minced garlic and salt in a bowl and mix until all is combined.
Cut your cucumber, tomato and red onion into thin strips.
Now grill your halloumi until its browned. Flip and repeat on the other side of the cheese.
Heat your pitta under the grill until slightly crispy.
To assemble, spread some of your tahini yogurt onto your crispy pitta, place a mix of your salad bits across the middle and place your browned halloumi on top. Squeeze any remaining lemon juice on top and serve.
