Whilst it's not a Christmas treat per se, many people will be making it in this festive season to serve to family who come and visit. As you slice it as wide or thin as you wish you can choose how many servings it is and it's perfect for those last minute added-guest situations.

Ingredients

  • 2 1/2 cups shortcake biscuits
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup melted butter
  • 1/2 cup cocoa powder
  • Icing sugar
Instructions

Place your shortcake biscuits in a ziplock bag and break them into small pieces with your hands. Aim for small pieces, but avoid turning them into powder.
In a large bowl, mix the eggs, sugar, melted butter, and cocoa powder until you achieve a very thick, sticky mixture.
Gradually add the crushed biscuits to the mixture while continuously mixing.
Take cling film and transfer the mixture onto it in the middle. Shape it with your hands to form a large salami-like log. Sprinkle icing sugar all over, then close the cling film around it to hold its shape. Wrap it in foil and refrigerate for at least 3 hours until it becomes firm.
