I don't know how many mornings I am craving a full breakfast of bacon, eggs, toast... but I have zero energy to cook this up when the craving hits. It takes so much time! Let this recipe be your shortcut for a quick and portable breakfast you can eat on your way to work, or hand to the kids as they hop on the bus, make ahead for an easy brunch, or walk ten feet to your home office like me and enjoy whenever the craving strikes.


We are using the ultimate easy and amazing puff pastry as the wrap. You will scramble your eggs, cook your bacon, and gather these together with some shredded cheese inside of a square of puff pastry. You will wrap up the pastry like a little miniature burrito and bake in an egg wash on top. Then...it's done!


To freeze for later, let them cool completely and then freeze them individually apart on a cookie sheet in the freezer until frozen. Then, I like to wrap mine in either plastic wrap or foil and place these into an airtight container to go in the freezer.


For quick reheat, microwave for 1.5-2 minutes under a damp paper towel. I like to then pop these in the toaster oven for 5 minutes to get crispy again. You can also use your oven. Or, if you are moving at warp speed, microwave is perfect, you will just lose a little bit of the crunch on top after these have been frozen.

Ingredients
Breakfast Sandwiches
  • 1 package of frozen puff pastry, thawed (two sheets)
  • ~12 slices bacon, halved
  • 1 C shredded cheddar cheese (white or yellow is fine)
  • 10 eggs, scrambled
  • 2 Tbsp milk
  • 1 egg for egg wash
  • salt/pepper/seasonings to your liking
Instructions

Cook your bacon-if you have extra time you can also bake your bacon on a cookie sheet for a little less mess. Set aside to drain and cool
Scramble your eggs and set aside to cool slightly (I add a little milk to mine)
Roll out each sheet of puff pastry on a clean floured surface until you can cut about 6 nice-sized squares from it.
Do this again with the second sheet. You will have a total of 12 squares. (This is not scientific-look at the photos for reference on approximate size. If you want to go bigger-do it! If you want to go smaller, add fewer toppings and go for it).
Preheat oven to 375
Top your puff pastry squares with scrambled eggs, shredded cheese, and bacon
Wrap them up!
Place sandwiches seam side down on parchment paper lined baking sheet
Cut a slit or two in the top to let them vent a little bit while baking.
Wash the tops of the sandwiches with an egg/water wash.
Option to sprinkle with your favorite seasonings-everything bagel or sesame seeds would be great
Bake for 20-25 minutes until golden brown. monitor your oven-it may be slightly more or less.
Tips
  • I didn't have any on hand, but these would be wonderful with some everything bagel seasoning on top of the egg wash before baking! Or even just sesame seeds or dried onions or garlic..possibilities are endless!
  • I served mine with jalapeño jelly I made over the summer which was a nice contrast to it!
