Anchovy Toast Soldiers With Soft Boiled Egg

I have always been a huge fan of soft boiled eggs especially the runny egg yolks because let’s face it, it’s the best part! Soft boiled eggs for breakfast is one of my favorite things to eat. Luckily for me, at least one of my kids share in the same enjoyment as me. Unfortunately, the other despises eggs in their natural form and refuses to eat them whether I cook them sunny side up, boiled, soft boiled, poached or scrambled. I am still waiting for the day when she will grow out of this and start to like them.

Sometimes, as a special treat, I will make anchovy butter toast soldiers to have with the soft boiled eggs. And, boy, are they ever good with that extra hit of umami from the anchovies. They are indeed a special treat as I don’t often have butter slathered on toast so I savor every bite! Please do give this a try as it is incredibly delicious.

Anchovy Toast Soldiers With Soft Boiled Egg

Anchovy butter
  • 3 tbsps unsalted butter
  • 2 anchovy fillets
  • 1/8 tsp garlic powder
  • 2 tbsps minced parsley
  • salt
  • pepper

  • 3 slices bread
  • 2 eggs per person
  • salt
  • pepper

Fill a small saucepan 3/4 full with water and bring to a boil.
Gently place the eggs in the boiling water and boil for 3 minutes for soft boiled eggs.
In a small bowl, mix together the anchovy butter ingredients mashing the anchovy into the butter with the back of a spoon. Season with salt and pepper to taste.
Toast the bread to your liking and slather with the anchovy butter. Slice the toast into large finger sized pieces (soldiers).
Serve the soft boiled eggs in egg cups along side with the toast soldiers and some salt and pepper.
Crack the top part of the egg, peel away the shell and spoon off the first bit of the white into your mouth revealing the yolk. Dip the toast soldiers into the runny yolk and enjoy!
