I had some lemons I needed to use up, so I decided to play around with a cookie recipe and I accidentally made quite possibly the best cookie I’ve ever baked.

“These cookies are insanely ridiculous.”

“These are even better than the lemon Girl Scout cookies!”

“They’re so soft, how did you make these?!”

“What did you put in these cookies?! They are so good!”

That is just some feedback I received after baking these lemon sugar cookies and sharing them with friends and family. They are the perfect summer treat and they are super easy to make. But be careful, they are addicting!

Ingredients

  • 1 cup of softened butter
  • 1 cup sugar + 1/4 cup set aside
  • 1 egg
  • 1 tsp vanilla 
  • Juice from one lemon
  • Zest from two lemons
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda 
Instructions

Preheat oven to 350° and grease a baking sheet or line with parchment paper.
In a large bowl, beat together the butter, sugar, egg, vanilla, lemon juice, and lemon zest.
Add in the flour, baking powder, and baking soda and mix until just combined.
Use a cookie scoop to form balls and roll into the extra 1/4 cup of sugar.
Place cookies on baking sheet and bake for 8-10 minutes or until cookies are set and golden brown on the edges.
