Ever had an Apple cider donut? I either totally missed them while growing up, or it’s just become a recent trend, but I had my first only one a few years ago. And wow! Are they good 🙌🏻 Ready to experience that in cookie form?


These Apple Cider Snockerdoodles are soft, chewy, EASY to make, and initially taste like a snickerdoodle until you get hit with a big ol’ taste of Fall & Apple goodness. Which is simply achieved by replacing some of them sugar with the powdered apple cider drink mix you can find at most grocery stores this time of year.

Ingredients

  • 1 cup Brown Sugar
  • 3 0.74 Oz packets of Apple Cider Drink mix (about one heaping 1/4 cup)
  • 1 cup Unsalted Butter
  • 1 egg
  • 2 Tsp Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp salt
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Sugar
  • 2 tsp Ground Cinnamon
Instructions

Preheat the oven to 350 degrees. Add 1 cup of brown sugar, 3 0.74 Oz packets of Apple Cider Drink mix (about one heaping 1/4 cup) , and the 1 cup of the softened butter to a large bowl. Beat with an electric mixer until fluffy.
Add in 1 egg and 2 tsp vanilla and mix together. Then add the 2 cup of All-purpose flour, 1/2 tsp of baking powder, 1/2 tsp of baking soda, and 1/4 tsp of salt. Beat until just combined.
In a small bowl, mix the 2 Tbsp of Brown Sugar, 2 Tbsp of sugar, and 2 tsp Ground Cinnamon. Scoop each cookie onto a greased baking sheet (it should make about 30 medium cookies), then roll them into the cinnamon sugar mixture. Do not press down- keep it in a ball.
Bake for 8-10 minutes, then let them sit on the baking sheet for about 5 minutes before transferring them to a cooling rack. Store in an airtight container.
