Mini Sugar Cookie Sandwiches “Jersey Girl Knows Best”
If you have leftover frosting, why not make sandwich cookies! These sprinkled sugar cookies are sure to impress and with a little added sweetness in the middle they with certainly be a crowd pleaser! Ready?! Let’s do this!
It’s time to get started and cream the butter and sugar!
After the batter is made I folded in the sprinkles. Since these were for Father’s Day I used blue and green sprinkles!
I use the smallest ice cream scoop which about 1 Tbsp.
Since I made small cookies, I cut the scooped cookie dough in half then rolled them into a ball.
I added extra sprinkles on top for a pop of decoration.
These are the finished mini cookies.
I used some leftover vanilla buttercream frosting!
I gently pressed another cookie on top of the frosting and the result was adorable! I hope you enjoyed this recipe! They were just the right amount of buttery cookie and sweet frosting! Enjoy!

Recipe details
Ingredients
- 2 cups Flour
- 1/2 tsp. Baking soda
- 1 tsp. Baking powder
- 1 cup sugar
- 1 large egg
- 1 tsp. Vanilla extract
- 2 sticks butter, softened
- 1/4 cup colored sprinkles, (reserve 1Tbsp. for decoration)
Instructions
- Preheat oven to 350F .
- Combine the dry ingredients.
- In a separate bowl, cream butter, sugar and vanilla until combined.
- Add in egg yolks into wet ingredients until combined.
- Gradually add in dry ingredients into wet ingredients on low speed until combined. Fold in the sprinkles.
- Scoop out dough with small ice cream scoop then cut in half and form a ball. Add a few more sprinkles on top for decoration.
- Bake on parchment lined cookie sheet for 6-8 minutes or until lightly golden brown.
- Remove cookies to cool on a wired rack.
- Add frosting, about 1 tsp., to center of one cookie then top with another cookie a gently press down.
