Ingredients

  • 1 cup almond meal
  • 1/3 cup powdered sugar
  • 1/4 teaspoon vanilla essence
  • 1 egg white, lightly beaten
  • Handful of flaked almonds
  • powdered sugar for dusting (optional)
Instructions

Preheat the oven to 180 degrees Celsius (360 Fahrenheit) and line a baking tray with parchment paper.
In a mixing bowl, combine the almond meal with powdered sugar and vanilla essence until incorporated. Add in the egg white.
Scoop one tablespoon of the mixture one at a time, roll into a ball with your hands and place on the prepared tray.
Use the back of a spoon to press down the cookies until flat. Press into each cookies a few almond flakes.
Place tray in preheated oven and bake for around 12 mins or until just beginning to turn golden brown at the edges.
remove from the oven and let cool completely before dusting with powered sugar and serving.
