- 1 cup almond meal
- 1/3 cup powdered sugar
- 1/4 teaspoon vanilla essence
- 1 egg white, lightly beaten
- Handful of flaked almonds
- powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 180 degrees Celsius (360 Fahrenheit) and line a baking tray with parchment paper.
- In a mixing bowl, combine the almond meal with powdered sugar and vanilla essence until incorporated. Add in the egg white.
- Scoop one tablespoon of the mixture one at a time, roll into a ball with your hands and place on the prepared tray.
- Use the back of a spoon to press down the cookies until flat. Press into each cookies a few almond flakes.
- Place tray in preheated oven and bake for around 12 mins or until just beginning to turn golden brown at the edges.
- remove from the oven and let cool completely before dusting with powered sugar and serving.
