It’s officially pumpkin season!! I have put out all of my Fall decorations and lit the Fall candles. The only thing left to do is start baking all of the thing’s pumpkin!!


These No Bake Pumpkin Protein Cookies are a delicious but lighter treat to get the season off to a healthy start!

7 simple ingredients come together to create a yummy cookie packed with protein and nutrients.

No Bake Pumpkin Protein Cookies are a simple, two step recipe. Simply mix all of the ingredients together in a large bowl. Then scoop out 15 cookies onto a baking sheet and freeze for 30 minutes. It is that simple!

One cookie provides 100cal, 5g protein and 13g carbs making it the perfect Fall snack!

Ingredients

  • 1 cup quick oats
  • 1/4 cup natural peanut butter
  • 1/4 cup honey
  • 2 scoops vanilla protein powder
  • 1/3 cup pumpkin puree
  • 1 tbsp pumpkin spice
  • 1/4 cup chocolate chips
Instructions

Mix oats, peanut butter, honey, pumpkin purée, protein powder and pumpkin spice together in a large bowl.
Stir in the chocolate chips.
Prepare a baking sheet by placing wax baking paper on it and spraying it with non-stick cooking spray.
Use a spoon to scoop out fifteen cookies onto the baking sheet.
Place in the freezer for 15 minutes.

  • Store in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
