No Bake Birds Nest Cookies RecipesWe have been making these cookies since I was a kid. I remember making them with my mom as a super special springtime treat. I wasn’t really a fan of the coconut so we would make a few without it just for me. As an adult, I have acquired a taste so now love the entire cookie treat. These can be made with butterscotch morsels but also with chocolate or vanilla chips. This recipe mixes a few of them together to give it the best possible taste of all. This is one of the best No Bake Birds Nest Cookies Recipes ever. Trust me and give it a try.

Ingredients Needed

  • 2 Cups Chow Mein Noodles – Yes, sounds weird but trust me.

  • 1/2 Cup Butterscotch Chips

  • 1/2 Cup White Chocolate Chips

  • 1/2 Cup Smooth Peanut Butter

  • 1/2 Cup Coconut

  • Green Food Coloring

  • Candy Eggs (Can be chocolate or jelly beans…)

Directions

This is such an easy peasy recipe. There is NO BAKING required which means these are great for making with kids. The results of a finished and ready to eat cookie happens in minutes. While I recommend the melting part be done on the stovetop in a double boiler, it works in the microwave too. I am not going to lie, I have made them both ways. This birds nest cookies recipes idea can be altered to change egg colors and flavors based on chip choices.

Start by melting and mixing together the candy chips with the peanut butter. The mixture should be smooth and creamy.

Add in the chow mein noodles and GENTLY stir until they are covered in the candy mixture.

Drop the mixture by large spoonful on to a surface that is covered with waxed paper (or parchment paper). Use the spoon to form a little divot in the center to create a place the eggs to fit in the nest.

While the nests are hardening, mix the coconut with a little bit of green food coloring in a baggy to look like grass.

Add the grass to the nests then add a few candy eggs. Aren’t they so dang cute? I love this no bake birds nest cookies recipes idea.

They are totally delicious and such a great twist on the traditional haystack cookie recipe! Warning – these are super rich. I can only eat one at a time. They are great to add to a festive cookie plate with other fun snacks and goodies.
