A rich and big single serve Mini Egg Protein Cookie with a protein chocolate frosting too! This healthy mini egg cookie uses protein powder and has no sugar or butter added – a great Easter dessert for one.
Okay this Easter egg protein cookie was so good, my fiancé ate 2 of them! So rich and so good, he was at loss of words.
But for real – no guilt on these ones because it’s all healthy ingredients in this Easter chocolate cookie.
Ingredients for Mini Egg Protein Cookie
This healthy mini egg protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar either.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Chocolate Protein Powder for high protein cookie that’s also sugar free.
- I used a whey-caesin blend form HTLT Supps; It works great for baking.
- Unsweetened Cocoa
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Non-fat Greek Yogurt contributes to the oil-free part of these chocolate Easter protein cookies since it adds the moisture, and also extra protein
- Unsweetened Applesauce for a little more dense and moist cookie
- Almond Milk
- Baking Powder

Ingredients
- 1/4 cup Oat Flour, 22g, see post for subs
- 2 Tbsp Chocolate Protein Powder, Whey-Caesin, 11g
- 1 1/2 Tbsp Unsweetened Cocoa, 7-8g
- 1 Tbsp Peanut Butter Powder, 6g
- 1/4 + 1/8 tsp Baking Powder
- 3 Tbsp Unsweetened Almond Milk, 45ml
- 1 1/2 Tbsp Non-fat Plain Greek Yogurt, 21g
- 1/2 Tbsp Unsweetened Applesauce, 8g
Topping:
- 1 Tbsp Non-fat Plain Greek Yogurt, 14g
- 1 Tbsp Chocolate Protein Powder, Whey-Caesin, 5g
- 1 tsp Unsweetened Cocoa, 2g
- 1/2 tsp Unsweetened Almond Milk, 2g
- 5 g Chopped Mini Eggs
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine oat flour, protein powder, cocoa, peanut butter powder and baking powder in a bowl.
- Add milk, Greek yogurt and applesauce, and mix to form batter.
- Transfer cookie mixture onto baking sheet, spread with spoon and shape – should be about 5” wide.
- Bake about 12-13 minutes – top should be cooked and dry to touch.Let cool.
Topping:
- Combine Greek yogurt, protein powder, cocoa powder and almond milk (little at a time) in a bowl.
- Spread over cooled cookie, top with chopped mini eggs and enjoy!
