Everyone loves cookies that are chewy on the inside, crispy on the outside, and loaded with chocolate chips... am I right? Thought so!
These cookies are no different... they will bake in the same amount of time it takes to mix the batter. The only caveat is waiting to chill the cookies in the fridge for 2-24 hours. But DO NOT skip this step, it is crucial to ensuring your cookies come out chew yet crispy!
Mix together the cooled brown butter along with the sugars. Once mixed, add the egg, egg yolk, and vanilla.
Using a spatula, mix in the dry ingredients just until the flour is combined.
Scoop and roll the dough into 1 to 1.5 oz balls, and chill in the fridge for 2-24 hours.
Allow the cookies to rest for 5 minutes and enjoy!

Ingredients
- 3/4 cup brown butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 1/2 cups bread flour
- 1 egg
- 1 egg yolk
- 3/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp vanilla paste
- 6oz chocolate chips
Instructions
- Add butter to a medium sauce pan and turn the heat to medium-low, and cook stirring consistently, until browned. Once browned, set aside to cool.
- In a medium bowl, whisk the sugars with the cooled butter. Then add the egg, egg yolk, and vanilla. Whisk until the sugars are dissolved and the mixture is smooth.
- Using a spatula, fold the dry ingredients into the wet ingredients, until all the flour has been incorporated. Add the chocolate chips and fold until incorporated.
- Scoop and/or roll into 1-1.5oz balls. Place on a sheet tray and chill in the fridge for 2 to 24 hours.
- Preheat oven to 350º, and transfer the cookies to a parchment paper lined baking sheet.
- Transfer the cookies to the oven and bake - 1oz cookies will take about 11 minutes, where 1.5oz cookies will take about 16 minutes. About halfway through cooking, remove the cookies from the oven and bang the baking sheet on the stove a few times. Continue this process every 2-3 minutes.
- Once done, let the cookies cool for 5 minutes.

What does "banging the cookie sheet on the stove a few times every 2-3 minutes" accomplish? What happens if this is not done? This is the sole reason I don't want to try this recipe.
