Maraschino Cherry Almond Chocolate Cookies

Growing up, I was the one who never wanted a cherry on her hot fudge sundaes. Cherries have never been my thing. But, I knew my older daughter, Karli would like them. And really, that was enough for me to try them.
Cookies are a staple in my house. Rarely, does my cookie jar stay empty for long. Adding new recipes to my cookie recipe collection is a hobby that everyone in my family loves!

Maraschino Cherry Almond Chocolate Cookies
Recipe details
Ingredients
- 1 cup butter softened
- 1 teaspoon almond extract
- 1 cup powdered sugar
- 2 1/4 cups all purpose flour
- 2–3 tablespoons maraschino cherry juice
- 1/2 cup maraschino cherries chopped
- 1 cup semi sweet chocolate chip morsels
Instructions
- Preheat oven to 350 degrees. Cover cookie sheets with parchment paper.
- In large bowl with mixer beat butter until smooth and creamy. Beat in almond extract and powdered sugar. Turn mixer to stir or low and slowly add flour mixing in until incorporated. Mix in maraschino cherry juice and maraschino cherries. Stir in chocolate chips.
- Roll into 1 inch balls and place on parchment paper. Spray bottom the of a glass with non stick cooking spray and flatten balls. You will need to spray glass several times.
- Bake for 12-14 minutes. Allow to cool for 5 minutes before removing cookies to cookie cooling racks.
Tips
- I always rotate my cookies through my 3 oven racks for overall even baking.

I love cherries and these are beautiful cookies, but they're not very sweet and they're crying out for a little salt to enhance the flavors. Next time I make them, I'll switch to granulated sugar (200g in a cup vs. 130g for powdered sugar) and add maybe a 1/2t salt. Otherwise, very yummy.
I got maraschino cherry syrup. Will that be ok?
