I’ve read that of all the five senses, smell is the one most tied to memory. It’s hard to argue that when the smell of chocolate chip cookies comes wafting up out of the oven. The moment it hits me I’m instantly transported back to childhood. Where cookies, and potential acquisition of more cookies, were my primary interest. Even though my sweet tooth has faded over the years (I still love dessert, it’s just not my primary culinary interest anymore) I still never can turn away from a good cookie…or cheesecake…or regular cake…ok. I’m getting distracted. The perfect cookies are really tough to get just right. To be honest, I can rarely accomplish that feat. But, it doesn’t ever stop me from trying.

Ingredients

  • 1 cup butter softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tablespoon of vanilla
  • 2 eggs
  • 2.5 cups flour
  • 1 teaspoon baking powder
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons kosher salt
  • 12 oz bag of chocolate chips
  • Dash of sea salt
  • 1 tablespoon butter (for greasing sheet)
Instructions

Preheat oven to 375° Fahrenheit and lightly grease a cookie sheet.
Add butter, white sugar, and brown sugar together in mixer and cream.
Add eggs and vanilla and cream well.
Sift flour, baking powder, baking soda, and kosher salt together in a separate bowl.
Add the flour mixture to wet ingredients and slowly mix well.
Add chocolate chips and stir into batter.
Drop cookies onto cookie sheet. I do about one rounded tablespoon per cookie.
Bake for about 12 minutes or until lightly brown on the bottom.
Right after they come out of the oven finish the cookies with a little sprinkle of sea salt. Let cool before serving.
Tips
  • If you don't have a stand mixer, a hand mixer works fine.
