These one of a kind cookies truly know how to make any event sparkle like no other! There is no other way to describe them other than simple fun. I love making these cookies because they give me a chance to bring out all of my never really used sprinkles that I love so much and can't seem to stop buying (even though I don't really have much use for them!) The bet part about these cookies is that they don't only look fun, they also taste delicious. For an added touch, I love to add a basic frosting - powdered sugar and a few tablespoons of water with a drop of a food color of your choice. Add a few sprinkles on top and you've got yourself an upgraded sprinkle cookie like no other!

Ingredients
- 2.5 cups plain flour
- 1/4 cup cornstarch
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup canola oil
- 1 cup sugar
- 1 egg
- 2 tsp vanilla
- 3/4 cup assorted sprinkles
- 1/2 cup white chocolate chips
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the oil, sugar, egg and vanilla extract until fully incorporated.
- Gradually add the flour mixture to the other mixture, beating until just combined.
- Stir in the sprinkles and chocolate chips until evenly distributed throughout the dough.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Use a tablespoon to scoop out golf sized amounts of dough, roll them into balls and transfer them to the prepared baking sheet, leaving about 3 cm (1 inch) between each cookie.
- Use the back of a spoon to flatted the dough balls.
- Bake for 10 minutes or until the edges of the cookies are just starting to turn golden.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
