Peach Crisp With Oats

I am sure that you have seen peaches in all the grocery stores right now! Besides just snacking on them, here is a classic peach crisp recipe. Most peach crisp recipes out there have a lot of butter, sugar, and flour. This recipe has minimal added sugar, whole grain oats, and no butter! This was delicious and I highly recommend making it a la mode (my favorite ice cream with this is Jenni's Ooey Goey Butter Cake!)


This recipe is fit for a 9x9 pan but you can double this recipe, halve it, etc. to fit your serving needs.

Ingredients
Peach Crisp with Oats
  • 5 peaches, chopped
  • 1 tbsp brown sugar
  • 2 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 cup oats
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 3/4 cup coconut oil
  • 1 tbsp cinnamon
Instructions
Peach Crisp with Oats
Preheat oven to 350
Lightly grease a 9x9 baking pan
In a medium mixing bowl, mix peaches, cornstarch, cinnamon, brown sugar, and vanilla
In another medium mixing bowl, mix flour, oats, baking powder, cinnamon, and coconut oil
Pour peach mixture to baking pan and spread evenly
Top peach mixture with oat mixture
Bake for 20-25 minutes
Tips
  • If the mixture feels too dry, add more coconut oil
