Apple and Pear Crumble

Apple and pear crumble. A deliciously sweet and juicy, cinnamon and coconut infused layer of warm fruit, beneath a golden and buttery crumble topping. This dessert is a slight twist on the classic apple crumble.


I've added pears and coconut, and served it with pomegranate rubies. It's effortlessly simple and can be ready in an hour or less. Freezer friendly and you can make it in advance. Just reheat it in the oven when needed.


This makes quite a sizeable dessert, so it's perfect for those big Sunday family lunches, or when hosting a few friends for dinner. It's one of my absolute favourite go-to desserts and a must-try recipe for winter.

Ingredients
Crumble Topping
  • 500ml (2 cups) cake flour
  • 80ml (⅓ cup) white sugar
  • 80ml (⅓ cup) brown sugar
  • 10ml (2 teaspoons) ground cinnamon
  • 80ml (⅓ cup) desiccated coconut
  • 125ml (½ cup) rolled oats
  • 125ml (½ cup) melted butter
Fruit Filling
  • 4 large pears, washed, deseeded and diced
  • 2 large apples, washed, deseeded and diced
  • 5ml (1 teaspoon) ground cinnamon
  • 15ml (1 tablespoon) white sugar
  • 15ml (1 tablespoon) desiccated coconut
  • 30ml (2 tablespoons) lemon juice
  • 80ml (⅓ cup) softened butter, cubed
Instructions

Place all the dry ingredients for the crumble topping into a large mixing bowl.
Add the melted butter and mix all the ingredients with a metal spoon until it forms a soft crumble consistency.
Set the crumble aside.
Now preheat the oven to 180°C.
Lightly grease a large ovenproof baking dish and add the apples and pears.
Sprinkle the cinnamon, sugar and coconut for the fruit filling over the apples and pears.
Now drizzle with the lemon juice and dot with the softened butter.
Pour the crumble mixture over the fruit filling, completely covering the fruit.
Place in the oven and bake for 40 minutes until the crumble topping is golden brown and the fruit tender when pierced with a fork.
Set aside for 10 minutes before serving.
Serve warm.
