Sweet and Sticky Pancetta Wrapped Brie

This recipe is simple and quick to make, it was just what was needed to get me into the festive spirit over the weekend!


The saltiness from the brie is paired with the smoky pancetta, while a sweet layer of cranberry sauce lies inside and is complimented by a drizzle of honey on top of the pancetta.


This makes a great sharing dish, either as a snack or an appetiser.

Crispy on the outside and gooey on the inside, this brie is the perfect combination of sweet and saltiness.

First, a generous layer of sweet Cranberry sauce is spread on top of the brie.

The brie is then tightly wrapped in strips of smoked pancetta.

Before being baked until crispy and drizzled in honey.

Goes great with toasted crusty bread for dipping!

Ingredients

  • 1 wheel of brie
  • 2 tablespoons smooth cranberry sauce
  • 12 rashers smoked pancetta
  • 1 tablespoon honey
Instructions

Preheat your oven to 180 degrees celcius.
Spread an even layer of the cranberry sauce into the top of the brie.
Place half of the pancetta rashers over the top of the brie in a horizontal direction, then overlay with the rest of the pancetta in a vertical direction to create a criss-cross effect.
Place the brie into a shallow dish or baking tray.
Place in the centre of your preheated oven and bake for 20 minutes or until the pancetta is cooked and starting to crisp.
Drizzle the honey over the top of the pancetta and spread carefully, then return to the oven and bake for a further 10 minutes until the pancetta is crispy.
Remove from the oven and leave to stand for 5 minutes, before slicing into wedges and serving.
