These scones are SUPER simple and you could adapt the recipe by adding a glaze or a different ingredient to flavor.


For the price of one piece of Starbucks delicious bakery items, we could bake an entire batch ourselves.


You’ll find these recipes simple enough to whip together quickly. Plus, most of the ingredients are staples already in your food pantry, minus one ingredient.


Lastly, you can alter the scone recipe to suit the season. Adding a simple lemon sauce can completely take this recipe in a new direction.

Ingredients

  • 2 cup All-purpose flour
  • 1/3 cup Sugar
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter, 8 tbsps (Frozen)
  • 1 Egg
  • 4 oz Sour cream
  • 2 tsp Sugar {Course sugar would be best}
  • 1/4 Cup Blueberries
Instructions

Freeze butter.
You will need to use the middle position oven rack; adjust if necessary. Preheat oven to 400 degrees F (204 C).
In a bowl, mix the first five ingredients: flour, sugar, baking soda/powder, and salt.
Using the large holes of your grater, grate the butter over the dry ingredients. Next, work the butter into the flour mixture using your fingers. The mixture will appear dry but will bind as you work it.
In a separate bowl mix 4 oz of sour cream and 1 egg. Pour sour cream mixture into your large bowl containing the flour mixture. Use your hands to blend and lightly fold in the blueberries.
Create 6 balls and then lightly flatten into the desired shape. To imitate Starbucks scones create a square shape and then use a knife to cut two triangles. (I forgot to do this - ugh!) Place on a cookie sheet and sprinkle with 2 tsp of sugar. The dough should be about 3/4 of an inch thick.
Bake for about 15 to 16 minutes or until lightly golden on top. Be careful not to burn the bottoms.
Tips
  • If the dough is tacky as you are shaping the scones, you can use a little flour.

    These do look easy! I am not a huge blueberry fan, but I might try them with chocolate chips (either semi-sweet or dark).
