When you bake a batch of easy, fresh scones, don’t expect them to last long! This classic recipe takes a summer-time twist by adding fresh peaches to fruit them up! Enjoy this treat at your next brunch or for dessert with whipped cream and peach slices. These Delicious Peach Apricot Scones are sure to please!

Peel and Freeze Peach Slices

This recipe called for dried peaches, but since peaches are in season, I wanted to use fresh peaches. To keep the chunks from being all sloppy in the scones, freeze slices ahead of time.

To easily peel peaches, boil water. Then lower to a simmer. Submerge peach with a slotted spoon for 30 seconds. Then dip in ice water. The skin will easily peel off without the flesh.

Slice peach and submerge slices in orange juice. Lay singly on parchment or wax paper and freeze. Once frozen, cut up in small chunks for scones. (yummy as a snack, too;)

How to Make Scones

Ingredients:

  • 3 cups unbleached flour
  • 1/2 cup sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, cold, cut up into 1/2 inch pieces
  • 4 ounces cream cheese, cold and cut up
  • 1 egg
  • 1/2 cup buttermilk or 2 Tb dried buttermilk and 1/2 cup water
  • 1 cup apricot fruit spread
  • 1 cup frozen peaches, cut small

Directions:

Preheat oven to 400 degrees.

Place parchment paper on 2 large baking sheets.

In large bowl, combine dry ingredients: flour, sugar, baking powder and salt.

Add cold butter and cream cheese and mix just to combine. Dough will be crumbly.

Add egg and buttermilk and mix just until dough forms a ball.

Add apricot jam and peach chunks.

Place dough in piles roughly 5″ x 3″ for a rustic look. Makes 11-12 scones.

Bake 10 minutes. Reduce oven to 375 and bake 15 minutes more or until golden brown.

Let cool slightly. Serve warm.

Cream Cheese Drizzle (optional)

For an added treat, top your fresh baked scones with sweet Cream Cheese Drizzle and sugared ginger slices.


  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla
  • 3/4 Tablespoons milk
  • 3/4 Tablespoons sour cream

Beat cream cheese till smooth. Add sour cream. Beat in powdered sugar. Stir in vanilla and add milk to desired drizzle consistency.

Drizzle over scones and add sugared ginger slices, if desired.
