Three Different Muffins From Scratch in One Bowl

I have been dabbling in the world of baking, I was intimidated at first so I started with muffins and fruit breads that don't require any dough kneading (that's next). But it is NOT hard! I swear anyone can do it, and it will save you money plus you will know what is in your food.

Start with soft butter (I have also microwaved for 20 seconds to soften), mix with milk and two eggs.

Mix all together until all the butter starts getting mixed in.

In a separate bowl mix together the dry ingredients: 1 cup sugar, 2 cups flour, 1/2 teaspoon salt, 2 teaspoons baking powder.

Mix the dry ingredients together.

Pour the wet ingredients into the dry and mix along with 1 teaspoon vanilla extract. When the mixture is sticking together its mixed well.

Pour into lined muffin sheets.

Add a few cranberries or blue berries in each.

Push each berry in the dough.

In what's left of the batter, add chocolate chips and add this into the cupcake liners.

Bake for 25 minutes at 375 degrees fahrenheit until a toothpick comes out clean.

  • ½ cup softened butter
  • 1 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup milk
  • 1/2 cups blueberries
  • 1/2 cups cranberries
  • 1/4 cup chocolate chips

mix together all wet ingredient in one bowl
mix all dry ingredients separately
add together and mix the batter until there are no clumps
add batter to each muffin liner until 1/2 full
add berried on top and push into the batter
bake for 20 minutes at 375 degrees
check with toothpick, if it comes out clean the muffins are ready
