Muffins are go-to simple recipes that almost never fail, so here's another to add to the expansive list of muffin flavour combinations.


Peaches may not be the first thing to come to mind when you think of adding fruits to a muffin recipe, but their floral sweetness and undertones of sourness work well as a vessel for the spices you'll be adding to the batter. Where apples have sometimes very distinct and pervasive flavours, peaches take a subtler role and act more backstage.


The spices you use can vary depending on your pallete, so things like cinnamon or even ginger powder can be added.

Ingredients
For muffins batter
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1/2 tsp salt
  • 1/2 teaspoon ground cardamom
  • 3/4 cup milk
  • 1/2 cup (8 tablespoons) butter, melted and cooled
  • 2 eggs, room temperature, lightly beaten
  • 2 tsp vanilla extract
  • 1 cup fresh peaches, peeled and chopped
  • pearl sugar for sprinkling, optional
Instructions
For muffins batter
Preheat the oven to 350°F (175°C). Line the muffin tins with mufins paper liners.
In a large bowl add and mix all the dry ingredients.
In a separate bowl whisk: milk, eggs and vanilla. Pour in the wet ingredient's into the dry ingredients, add melted butter, mix throughly then fold in chopped peach.
Scoop the muffins batter into the prepared muffins paper liners and sprinkle with pearl sugar on top, then bake for 20-25 minutes (depending on the muffins' size) or until a toothpick inserted in the center comes out clean. Move the muffins to a wire rack to cool before serving.
