Why Eat Whole Grains

Though I’m sure you’ve all heard the million reasons why you should eat whole grains:

  • high in fiber
  • high in vitamin E
  • aids in digestion
  • filling!

I’d like to remind you that whole wheat flour and whole grains don’t mean dense breads and muffins that could put a hole through a wall. In fact, whole grains, especially those milled right at home are soft and incredibly delicious.

If you’ve never heard of milling flour at home, the best way to get great tasting, whole grain flour, then check out my full article on Quick Guide to Whole Grains and/or my Youtube video on how to Mill Grains at Home.

What You’ll Need for Peach Blueberry Spice Muffins

Most of the ingredients in this recipe are things you may already have on hand in your pantry. I try not to use hard to find ingredients, and if you don’t have a grain mill and soft wheat flour, you can certainly substitute with all-purpose flour or store bought whole wheat flour.

  • 2 cups soft wheat flour (pastry flour)
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 cup brown sugar or sucanat
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 1 egg
  • 1/3 cup oil (olive or avocado)
  • 1/2 cup milk (dairy or non-dairy)
  • 1 peach, peeled and chopped
  • 1 cup blueberries
  • 2 tbsp sugar, for sprinkling

Preparing the Muffin Batter

As with most muffins, you want to mix the ingredients as little as possible. Over worked muffin batter can lead to dense and heavy muffins, and that’s not what we want here. Follow these simple steps for mixing your peach blueberry muffin batter:

  1. Combine flour, salt, baking powder, brown sugar, and spices in a large bowl. Use a whisk to combine until you have an even blend.

2.Create a well in the center of the flour, add the egg, lightly beaten, soil and milk. Mix into flour until just combined.

3.Add the washed blueberries and chopped peaches and mix until distributed evenly.

4.Use a spoon or scoop to fill a 12-muffin pan. Batter should almost come to the top of each cup. Double check that both blueberries and peach chunks are distributed evenly amongst the muffins. Using a small spoon, sprinkle a small amount of sugar to the top of each batter filled cup.

5.Bake at 375 degrees for 18-20 minutes. Allow to cool in the pan for 3-5 minutes, then remove muffins to a wire cooling rack until completely cooled.

How to Store Peach Blueberry Muffins

Muffins are a pretty moist food all around, so my suggestion is to of course enjoy one pretty soon out of the oven. Once everyone has eaten their warm muffin fill, how should you store these delicious treats?

For 3-4 days, they can be stored in an airtight container with a paper towel laid on top of the muffins inside the container. This will help to absorb any excess moisture.

For longer term storage, place muffins in an airtight freezer bag and place in the freezer. When you’re ready to enjoy a muffin, simply place it on a microwave safe plate and heat for 30 seconds. They’re almost as good as fresh. Almost.

Substitutions for Peach Blueberry Spiced Muffins

Here are a few substitution options for baking these muffins at home:

  • Swap out soft white wheat for spelt for a nuttier flavor
  • For less glycemic impact, swap out the brown sugar for coconut sugar
  • Use melted butter in the place of the olive/avocado oil

With the right ingredients and a little patience, you can make the perfect breakfast muffin right at home. Enjoy the goodness of peaches, blueberries, and spices all in one delicious muffin!
