I used to make these muffins all the time for a quick and easy grab and go breakfast, but I have not made them for a long time. Just recently I randomly thought about them and decided to make them for this weeks breakfast prep. They remind me of the maple brown sugar Quakers instant oatmeal. I forgot how good they are. Especially straight out of the oven! In addition to the maple syrup and brown sugar, they are also packed with cinnamon and oats. I have used old fashioned oats, quick oats, and rolled oats and they all work just fine.

Ingredients

  • 1/2 cup pure maple syrup
  • 2 eggs
  • 1 cup milk
  • 1/3 cup oil
  • 1 tsp vanilla extract 
  • 2/3 cup brown sugar
  • 1 1/2 cups flour
  • 2 cups oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
Instructions

Preheat oven to 375° and either grease a muffin tin or add cupcake liners.
In a large bowl, combine maple syrup, eggs, milk, oil, vanilla and sugar.
Then stir in the flour, oats, baking powder, baking soda and cinnamon.
Pour into muffin tin and bake for about 15 minutes or until toothpick comes out clean.
