Maple Brown Sugar Muffins

I used to make these muffins all the time for a quick and easy grab and go breakfast, but I have not made them for a long time. Just recently I randomly thought about them and decided to make them for this weeks breakfast prep. They remind me of the maple brown sugar Quakers instant oatmeal. I forgot how good they are. Especially straight out of the oven! In addition to the maple syrup and brown sugar, they are also packed with cinnamon and oats. I have used old fashioned oats, quick oats, and rolled oats and they all work just fine.
Maple Brown Sugar Muffins

Ingredients
- 1/2 cup pure maple syrup
- 2 eggs
- 1 cup milk
- 1/3 cup oil
- 1 tsp vanilla extract
- 2/3 cup brown sugar
- 1 1/2 cups flour
- 2 cups oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 375° and either grease a muffin tin or add cupcake liners.
- In a large bowl, combine maple syrup, eggs, milk, oil, vanilla and sugar.
- Then stir in the flour, oats, baking powder, baking soda and cinnamon.
- Pour into muffin tin and bake for about 15 minutes or until toothpick comes out clean.
