Healthy Mini Breakfast Muffins
Looking for a super easy, quick and healthy breakfast or snack? Try these Healthy Mini Breakfast Muffins. With only 3 ingredients, these mini muffins come together in no time. They make for a healthy breakfast or snack and are kid approved!
Each mini muffin contains 30cal, 2g protein, and 3g carbs each. I suggest having 5 mini muffins for a snack (150cal, 10g protein and 15g carbs) or adding 1/2 cup Greek yogurt, 2 eggs, or 1/2 cup cottage cheese for a protein packed healthy meal.
Simply start by chopping up 6 small turkey or chicken sausage links. Then mix 1 1/4 cups high protein pancake mix (I used Kodiak pancake mix) with 1 cup skim milk and pouring over sausage links.
Bake at 400 degrees for 8-10 minutes and you have fluffy, delicious and healthy mini muffins.

Ingredients
- 6 small turkey or chicken sausage links
- 1 1/4 cup protein pancake mix (I used Kodiak pancake mix)
- 1 cup skim milk
Instructions
- Preheat oven to 400 degrees
- Grease a mini muffin tin
- Chop sausage links and place 2-3 pieces in each muffin
- Mix pancake mix with milk and pour batter into each muffin tin
- Bake for 8-10 minutes
Tips
- 5 mini muffins make a great snack (150cal, 10g protein and 15g carbs). Add 1/2 cup Greek yogurt, 2 eggs, or 1/2 cup cottage cheese to the side for a full healthy, protein packed meal.
