Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 3 teaspoons baking powder
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • 1/2 cup chopped walnuts
  • 1 banana, chopped
Instructions

Preheat the oven to 425 degrees.
Line a muffin pan with 12 paper liners.
In a large bowl, combine flour, sugar, salt and baking powder. Stir well.
Add banana and walnuts. Mix quickly, and push mixture to the sides of the bowl.
In a separate bowl, beat egg.
Stir milk and oil into egg.
Pour liquid mixture into the center of the flour mixture. Mix lightly until moistened.
Pour batter into muffin pan.
Drop oven temperature to 400 degrees.
Bake muffins for 20-25 minutes until golden in color.

    I like the banana muffin recipie but I would add a teaspoon of vanilla extract to it also. 😊
