Cranberry Cake With Almonds
If you’re looking for a way to enjoy cranberries this season, make this cranberry cake with almonds. There are a lot of flavors and textures happening in this recipe for a unique and tasty dessert experience.
The cake is sweet and the cranberries are tart to give your taste buds some action. Then you have the fluffy cake with the crunchy almonds to add different textures to the mix.
Cranberry almond cake works well as a dessert or as a cranberry coffee cake. Since the cake is not overly sweet, it’s delicious for breakfast or brunch.
Serve cranberry cake with almonds as a coffee cake or breakfast dessert during the holidays. I originally made this recipe while trying out the Ninja Foodi Oven.

My cousin was nice enough to share it with me, so I hope you can add it to your family favorites, as well. As I said, I used the Ninja Foodi Oven to bake this cake. I used the included sheet pan for baking, and it ended up shaving quite a bit of time off the usual baking time.
Around the holidays when the oven is in use, using the Ninja Foodi Oven is super helpful. Of course, there are no special kitchen gadgets required to make this cake. Simply use your traditional oven if you don’t have a Ninja Foodi.
Cranberry Cake Ingredients:
- 3 eggs
- 2 cups sugar
- 3/4 cup butter, softened
- 1 tsp almond extract
- 2 cups flour
- 2 1/2 cups cranberries
- 2/3 cup almond slivers
In a large bowl, beat eggs and sugar until thickened.
Add butter and almond extract and continue to beat mixture.
Slowly mix in flour until combined.
Fold in cranberries.
Grease the baking pan and spread the mixture in evenly.
Sprinkle almonds on the top.
If you use the Ninja Foodi Oven, bake at 350 degrees for 20-25 minutes.
Check with a toothpick.
Let cool and serve.
How to Bake in the Oven
My cousin typically uses a 13 x 9 baking dish and bakes in the oven at 350 degrees for 45 minutes.
You end up with about 20 servings and thicker slices if you go that route, so be sure to adjust the nutrition facts if that matters to you.
We chose to sprinkle the almond slivers on top of the cake.
Part of this was because we forgot to mix them in with the cranberries, but it ended up being a happy accident.
Topping the cake with almonds adds an additional crispy crunch that everyone loved.

This cake is flavorful enough on its own, but feel free to top with whipped cream or cream cheese frosting if you’re feeling it.
Again, there’s a good blend of flavors in this cake, but you can also add your choice of favorite mix-ins if you want to get creative.
White chocolate chips, caramel bits, walnuts, and pecans are just a few ideas that could be super tasty additions.
Cranberry Cake Recipes Notes and FAQ
If you don’t have fresh cranberries for this cake, you can use frozen. Just thaw them first.
You can substitute dried cranberries for fresh cranberries in baked goods, but remember to use 1/4 cup LESS of the dried. If a recipe calls for 1 cup of fresh cranberries, use 3/4 cup dried.
Yes. A lot of people call dried cranberries Craisins because it sounds like raisins. You’ll only ever see Craisin on Ocean Spray dried cranberries, though. They trademarked the word.
You don’t have to soak them, but if you want to get closer to a fresh cranberry feel in your recipe, soaking is easy. Just soak the cranberries in hot water and let them stand for 15 to 20 minutes and strain before using them.

You mentioned that you used the included Ninja Foodi Oven sheet pan for baking.
Can you please advise the size of that sheet pan? The depth/height of your cranberry cake looked perfect.
