Apple Cider Coffee Cake

Are you trying to be a little more health-conscious, but still want to eat delicious sweets? You can have your cake and eat it to with this recipe! This cake is free of refined sugars, but is so delicious and decadent. My husband does not eat any refined sugar (I know….I don’t think I could ever have the control to do that!) We were visiting a friend and I wanted to bring something special, but I also wanted my husband to be able to eat it, so I came up with this recipe. Reducing the apple cider gives a stronger apple flavor, so don’t skip that step! If you don’t have coconut sugar, don’t worry, I will include notes on substitutions.

Ingredients
For the Cake
  • 1 ½ cups white whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup (4 oz) butter, softened
  • ¾ cup coconut sugar (or ½ cup sugar + ¼ cup brown sugar)
  • 1 egg
  • 1 tsp almond extract
  • 1 cup apple cider
  • 1 ½ cup chopped tart apples (about 2 apples)
  • ¼ cup raisins
For the Crumb Topping
  • ½ cup all-purpose flour
  • ½ cup coconut sugar (or ½ cup brown sugar and omit the maple syrup)
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 5 tbsp butter
Instructions

Preheat oven to 350. Spray a 9x9 or 11x7 inch baking dish with non-stick cooking spray.
In a small saucepan, bring apple cider to a boil over medium-high heat. Reduce heat to medium and simmer until cider is reduced by half ( so you have 1/2 cup), about 10-15 minutes. Set aside to cool.
In a small bowl, sift flour, baking soda, baking powder, salt, cinnamon and nutmeg.
In the bowl of a mixer, or with a hand mixer, cream together butter and sugar until light and fluffy. Add in egg, almond extract, and cooled apple cider until creamy. Add dry ingredients to wet ingredients and mix just until combined. Stir in chopped apples and raisins.
Prepare topping by stirring together flour, sugar, and cinnamon. Cut in butter until it is pea-sized and the mixture resembles coarse crumbs.
Spread batter into prepared baking dish. Sprinkle with crumb topping. Bake for 25-30 minutes or until the cake is cooked (keep in mind that if you are inserting a cake tester the crumb topping appears wet when you pull the tester out)
Let cool completely before cutting.
Tips
  • If you don't have coconut sugar, you can use a combination of white and brown sugar!
  • If you don't have apple cider, just use 1/2 cup of milk. The cake won't have an intense apple flavor, but it will still be delicious!
