As soon as I was testing out this recipe, I knew it was going to be a major hit in our household. We love apple desserts here and even though the Christmas season has passed, that should not stop you from trying this out. It truly is a gem of a recipe. Composing of 3 perfect layers, it creates the perfect balance of flavors to make your mouth water…I’m drooling just writing this!
Ingredients in apple crumble coffee cake
I wouldn’t suggest changing anything in this recipe, keep the ingredients and measurements the same and you won’t be disappointed.
Use regular all-purpose flour for best results, for both the cake and crumble layer.
Use a small amount of brown sugar for the cake layer and a combination of brown and granulated for the crumble to create that caramelized effect.
Use a combination of baking powder and baking soda for the cake layer and add some cinnamon for that extra flavor.
Any milk can be used for this recipe, I used soya milk to make it dairy-free.
You can use any coffee you like, I used an instant brand.
I haven’t tried using different oils for this cake but I don’t see why it wouldn’t work. I used regular vegetable oil for this.
Use one regular sized egg.
For the apples: Mix them in some apple cider vinegar to soften them during the baking process and add about a tablespoon of sugar to create that caramelized effect and sweeten them just a bit.
Finally, use half a cup of melted butter, mixed in with the flour to create the crumble on top.
Tools you will need to make this
You don’t really need much to make this apple crumble coffee cake and you can easily use what you already have on hand.
You will need:
- Cake pan or spring pan (I used a small one)
- 2 mixing bowls
- Spatula to mix
- Whisk to mix
For measuring: 1/2 tsp, 1 tsp, 1 tbsp, 1/4 cup, 1/2 cup, 1 cup.

Ingredients
Cake layer
- 3/4 cup flour
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla (optional)
- 2 teaspoons coffee + 2 tablespoons water (mixed together)
- 1/4 cup milk
- 1/4 cup oil
- 1 egg
- 2 apples, cut into small pieces + 1 tablespoon apple cider vinegar + 1 tablespoon granulated sugar
Crumble
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 cup melted butter
- 1 – 1/2 cups flour
Instructions
- Start by mixing the flour, sugars, baking powder, baking soda, cinnamon and salt together until combined.
- Make a hole in the middle of the ingredients and add the milk, vanilla, egg, coffee mixture and oil and whisk together until smooth.
- Pour the cake batter into the pan then prepare the apples.
- Coat the apples in the apple cider vinegar and sugar.
- Place the apples on top of the cake batter.
- In another bowl, mix all the crumble ingredients together until combined.
- Crumble the mixture on top of the apple layer until the top is fully covered.
- Bake at 350°F/180°C for 30-35 minutes.

How big of a pan?
I have 6", 8" and 10" round baking pans.
You just state you used a "small" one.
Is the pan to be greased or not?
