Healthy Carrot Cake

I called this "carrot cake" but it's really more of a loaf. Regardless of what you call it, it is delicious and only had 1/2 a cup of sugar. I have been trying to up my baking skills since I like to feed the fam with whole wheat that doesn't contain any fillers. I am sure adding icing will make it less healthy but I thought it was great without the need for anything else!
This is my first time making this carrot cake and I think I have to say I nailed it.
Start with 1 cup whole wheat flour, 1/2 cup of sugar, 1/3 cup olive oil and 3 eggs.
Add all the ingredients along with 1/2 teaspoon baking soda, 1/2 teaspoon baking powder and 1 packet of apple sauce into a bowl and whisk it all together.
This add a cup of shredded carrots, 1 teaspoon vanilla extract, cinnamon and nutmeg.
Whisk all the ingredients together as best you can (it gets a little chunky).
Grease a loaf pan and pour in the mixture.
Bake in the oven for 35 minutes at 350 degrees fahrenhiet. After about 30 minutes, stick a tooth pick in and if it comes out clean its done, mine needed another 5 minutes.
The baby was a big fan and you don't have to feel guilty for having "cake" for breakfast!

- 1 cup flour

- 1 cup of shredded carrots
- 1 packet apple sauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda nutmeg
Instructions
- heat oven to 350 degrees
- mix all dry ingredients
- whisk in all other ingredients
- bake for about 35 minutes
