Full of carrots, walnuts and oats along with flour and sugars, this sweet treat is the perfect balance between healthy and delicious. This moist carrot oat loaf recipe has been taste-tested by multiple people and has been made TWICE in one week at my household, so trust me when I say it’s a good one!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg replacer (or 1 flax egg, 1 regular egg, etc.)
  • 2 + 1/2 cup grated carrots
  • 1/2 cup walnuts (optional)
Instructions

Preheat the oven to 350°F (or 175°C). Grease a loaf pan or use cooking spray, then line with parchment paper.
In a large mixing bowl, sift together flour, baking powder, baking soda, salt, cinnamon and mix in the rolled oats.
In a separate bowl, mix together both sugars, vegetable oil and the egg replacer until just combined. Fold in the carrots and walnuts.
Mix the carrot mixture into the flour mixture until everything is combined.
Pour your batter into the prepared loaf pan. (Optional: sprinkle on oats or grated carrots for a topping). Bake for 50 to 55 minutes or until a toothpick comes out clean.
