It is difficult to cook/bake any recipe with banana in my house. Every time I order bananas, they get finished within a few days. My little one loves banana so much that he can survive solely on it. So if I am planning to bake banana bread or cookies, I have to hide some bananas. Most of the times this little seeker somehow manages to find them as well.
Few weeks back I succeeded in saving three bananas and made this Double Chocolate Banana Bread. This recipe is egg free and is made with whole wheat flour. Instead of sugar I have used sweetcane organic rapadura (Panela). If you can’t find rapadura, you can use coconut sugar, powdered jaggery or Punjabi shakkar.

Ingredients
- 3 large bananas
- 1 1/2 cups whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 - 3/4 cup rapadura (as per your preference)
- 1 tbs baking powder
- 1/2 tsp baking soda
- 1/4 cup yogurt
- 1/4 cup milk
- 1/2 cup oil or butter or ghee
- Pinch of salt
- 1 tbs vanilla extract
- 1 tsp nutmeg powder
- 1 tsp cinnamon powder
- 1/2 cup choco chips
Instructions
- Preheat oven at 360 F/180 C.
- Greese a loaf pan and set aside.
- Mix dry ingredients ( flour, baking powder, baking soda, salt, cinnamon powder) together, keep aside.
- In a large bowl add bananas and mash it using a fork or blender.
- Add milk, yogurt, oil, vanilla extract, rapadura. Mix together.
- Blend it well till the sugar starts dissolving in the mixture.
- Add half the dry ingredients and mix.
- Add remaining half and blend well. Do not over mix.
- Stir in choco chips.
- Transfer cake batter into greased pan.
- Bake at 360 F/ 180 C for 55-60 mins
- Let it cool and enjoy
